My first project is actually a yummy recipe I saw for mini apple pies. Quick & easy - exactly how I like my baking and they were DELICIOUS!

Here's what you need: 
2 apples (preferably tart, I used Honey Crisp and they were delicious!)
1/2  cup of sugar
2 tbsp. cinnamon
2 tbsp. butter
1 package (2 crusts) of refrigerated pie crusts

Here's how:
-Combine sugar and cinnamon in small bowl, set aside.
-Roll pie crust on lightly floured surface.
-Lightly brush melted butter on top and sprinkle cinnamon and sugar mix on top. (I would recommend a heavy coat to make it a little sweeter) 
-Slice crust into 8 - 1 inch slices
-Slice apple into 8 equal pieces (I left the skin on but you can try it either way)
-Wrap each apple slice with a slice of crust
-Bake for 15-20 minutes at 425 degrees or until lightly brown 
-Serve warm with ice cream or a dab of cool whip

and that's it, a quick & easy yummy snack or desert!
