Yesterday, I decided to do something crazy: COOK! Weird right? We are always on the go and with odd mall schedules (that at least one of us doesn't have any more) we rarely have a set dinner time. But I found this recipe online and it looked some what simple so I decided to try it.
I actually bought all the ingredients for this last week - but life kind of just happens with us so this was the first chance I got to actually use the ingredients. Luckily these are all ingredients that you can store for a bit without worrying about them going bad.
This recipe is very simple:
Ingredients:
4 cups Quinoa
3-4 Large red potatoes
1 white onion chopped
1 clove garlic chopped
Green Beans
Brocoli
For Sauce:
1/2 cup grated parmesan
1 tb white whine vinegar
3 tb olive oil
(add or subtract to your liking)
Bring Quinoa and 4 cups water to a boil
Cut potatoes into 1/2in squares, fry in pan with a bit of olive oil, salt, and pepper
Bring brocoli and green beans to a boil
Lightly coat Quinoa with sauce
Arrange to your liking in a bowl!
Presto! A wonderful, healthy, not so hard meal to make in less than an hour.
One thing I will mention - we realized it was a bit to much in these large bowls so depending on your appetite you may way to try using a smaller one.
